Questions

How is nested data handled?

By default nested objects become dotted columns (address.city) and arrays become numbered columns (tags.0, tags.1). You can instead store nested values as JSON text in a single cell.

Are numbers kept as numbers when converting CSV to JSON?

Only if you turn on "Detect numbers and booleans". Otherwise every value stays text, which is safer for postcodes and phone numbers with leading zeros.
